You might be wondering why I continue writing vegetarian cookbooks when I am not a vegetarian myself. One of my biggest fears with releasing the first meatless book was that I’d get pushback for not eating exclusively plant-based. Which would be totally fair! Thankfully, the book was so well-received and everyone was so kind. My hope for this book is twofold. I hope that I can create some inspiration for vegetarians who either may be in a rut or need additional recipes that are quick and to the point. I also hope to show meat-eaters that you can have a delicious meal full of flavor without having to incorporate meat.
I think that I have a unique view of vegetarian cooking because I eat meat. Since I do have those carnivorous tendencies, I need my meals to be hearty and well-rounded without feeling like something is lacking. The recipes in this book are just that!

What percentage of recipes are vegan?
About 20% of the recipes are vegan on their own, and if they’re not, there’s usually a simple suggested swap to make it so!
Each recipe has labels at the top that indicated whether the recipe is Superfast (under 15 minutes), Gluten-Free, Dairy-Free, or Vegan.
What was your favorite part of the book writing process?
While I love to create and write recipes, I LOVE to write in general. The whole first chapter (Meatless Made Simple) of the book is a guide on navigating the recipes, the staples you should keep in your kitchen, WHY the book will work for you, and even the essential tools you need. I had so much fun letting my personality come through the text!
