30-Minute Meatless Cookbook

Whether you’re a vegetarian or a constant carnivore, my new book, 30-Minute Meatless Cookbook is perfect for busy weeknights and beyond!

Surprise! I wrote ANOTHER cookbook! in 2021 I brought you The 5-Ingredient Vegetarian Cookbook and this year, 30-Minute Meatless Cookbook has been my new book baby. I’m so excited to finally share it with you!

Vegetarian cooking is nutritious, delicious, and environmentally friendly. And whether you went meatless years ago or you’re just starting to experiment, this cookbook helps you create vegetarian recipes that are short on prep but big on flavor.

What sets this easy vegetarian cookbook apart:

  • Vegetarian basics—Discover how simple it can be to maintain a balanced diet with powerful proteins like tofu, filling fats such as coconut milk, complex carbs like quinoa, and more.
  • Easy execution—Quickly throw together a delicious dish in 30 minutes or less, with a range of classic and creative vegetarian recipes perfect for breakfast, lunch, or dinner.
  • Pro tips for ease and speed—Keep cooking stress-free with advice on everything from shopping shortcuts to recipe hacks like swapping tahini for peanut sauce or buying pre-cut veggies to save time.

You might be wondering why I continue writing vegetarian cookbooks when I am not a vegetarian myself. One of my biggest fears with releasing the first meatless book was that I’d get pushback for not eating exclusively plant-based. Which would be totally fair! Thankfully, the book was so well-received and everyone was so kind. My hope for this book is twofold. I hope that I can create some inspiration for vegetarians who either may be in a rut or need additional recipes that are quick and to the point. I also hope to show meat-eaters that you can have a delicious meal full of flavor without having to incorporate meat.

I think that I have a unique view of vegetarian cooking because I eat meat. Since I do have those carnivorous tendencies, I need my meals to be hearty and well-rounded without feeling like something is lacking. The recipes in this book are just that!

Here are some questions that I got from social media about the book

What percentage of recipes are vegan?

About 20% of the recipes are vegan on their own, and if they’re not, there’s usually a simple suggested swap to make it so!

Each recipe has labels at the top that indicated whether the recipe is Superfast (under 15 minutes), Gluten-Free, Dairy-Free, or Vegan.

What was your favorite part of the book writing process?

While I love to create and write recipes, I LOVE to write in general. The whole first chapter (Meatless Made Simple) of the book is a guide on navigating the recipes, the staples you should keep in your kitchen, WHY the book will work for you, and even the essential tools you need. I had so much fun letting my personality come through the text!

What type of recipes does the book include?

Breakfasts – 12 recipes, including Jalapeno Fritatta, Cheesy Grits and Greens, Cinnamon-Peach Ricotta Toast

Salads and Bowls – 12 recipes, including a Fried Goat Cheese Salad and Crispy Cabbage Bowles with Lemon-Tahini Sauce

Soups, Stews, and Chilis – 11 recipes, like Tortilla Soup with Quinoa and Curried Carrot and Ginger Soup

Handhelds – 13 recipes, like Bean and Cheese Floutas, Southwestern Egg Rolls, and Cauliflower Bahn Mi

Mains – 18 recipes, like Homestyle Vegetable Pot Pie, Spicy Cauliflower Tacos with Blue Cheese, and Hot Honey Corn Ribs

Homemade Staples – 10 recipes, including Crispy Garlic Chickpeas, Avocado Ranch Dressing, and Cashew Basil Pesto
