This hack will make cooking these Beef Sliders with Bacon Pepper Jam and Brie so easy and perfect for weeknights and entertaining!
Here’s what I hate about making sliders. Usually, slider buns come in a pack of 12, which is all well and good for a cookout, but when you’re cooking for 2 or 3, some of those buns are definitely bound for the trash can. Here’s my solution, using store-bought dinner rolls as buns to make these Beef Sliders with Bacon Pepper Jam and Brie!
I love that I can get out just a few at a time to make sliders for dinner for my family or I can use the whole bag to make a full batch! I even love using them to make breakfast sandwiches with sausage, egg, and cheese! So great for meal prep.
I literally always have store-bought dinner rolls in the freezer for nights when I just need a little something extra at the dinner table. PLUS, obviously, they make killer slider buns.
Beef Sliders with Bacon Pepper Jam and Brie Ingredients and Subs
bacon — I like to do thicker cut bacon!
orange bell peppers — You could also do green bell peppers instead and jalapeños for the habaneros if you want less spice and a green color.
habanero peppers
sugar
white vinegar
no or low sugar pectin — You can find this in any grocery store with the canning supplies.
salt
butter
store-bought dinner rolls — You could also use the artisan french rolls if you like. These are so quick and easy!
80/20 ground beef — You may want to use a lower or higher fat count and that’s totally fine!
pepper
garlic powder
onion powder
brie — goat cheese would also be a great pairing with the spicy jam.
How to make this Slider Recipe
- In a medium skillet over medium heat, cook the bacon until almost crisp, stirring it often. Set aside to drain.
- Place all the peppers, vinegar, pectin, salt, and butter in a large saucepan and bring to a full rolling boil over medium-high heat. Stir constantly.
- Add sugar and return to a boil for one minute.
- Remove from the heat and skim off any foam from the top. Stir in the reserved bacon. Fill sterile glass jars with the jam leaving a 1/2 inch of space at the top. You can continue to can them at this point if you like, but like this, they will last up to 3 weeks in the fridge. This recipe will make 6 half-pints.
- To make the slider buns, bake the store-bought dinner rolls according to the package directions. After they’ve cooled, use a bread knife to slice in half. You may then toast the cut side in a pan with butter, leave as is, or grill!
- To make the sliders, add the beef, salt, pepper, garlic powder, and onion powder in a medium bowl. Gently mix just to combine to avoid over mixing.
- To make patties, grab a ball of about 1.5 ounces and flatten as much as you can. (I like using a cookie scoop). I also like to press them between two sheets of parchment, plastic wrap, or wax paper to get them as flat as possible.
- Preheat a grill or large pan to medium-high heat. Cook the sliders for 1-2 minutes on each side to the desired doneness. Slice the top and bottom rind off of the brie and cut into pieces. Top the burgers with the cheese and allow them to sit for a minute for the cheese to warm.
- Spread the slider buns with bacon pepper jam and top with the burgers. Enjoy!
How to make slider buns from store-bought dinner rolls
If frozen, I started by baking them exactly as the directions on the back suggested. Once they were cool, I sliced them in half with a bread knife and toasted the cut sides in a pan with melted butter. You could also throw them on the grill if you like! Then, you have perfect buttery buns that go with any slider you choose.

Ingredients

- 8 habanero peppers, finely diced, seeds and ribs discarded (USE CAUTION)
- 4 1/2 cups sugar
- 1 1/2 cups white vinegar
- 1 packet no or low sugar pectin
- 1 pinch salt
- 1 teaspoon butter
For the Sliders
- 10 Rhodes Warm-N-Serve Soft White Rolls
- 1 pound 80/20 ground beef
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 8-ounce wheel of brie
