Browned Butter Espresso Blondies

Ahhhh….Seattle, Washington.  It’s home to the Pike Place Market, active volcanoes (I mean, they’re close enough), lots of precipitation, and my personal favorite…the original Starbucks.  Seattle is sprinkled with amazing coffee shops and takes their coffee artistry very seriously.  I couldn’t do a Seattle themed recipe without having coffee as the main ingredient.  These Browned Butter Espresso Blondies are A-MAZING.  I hate tooting my own horn (really I don’t), but these are so incredibly delicious, especially if you are a coffee addict like myself.  Not to mention, they’re soooooo easy to make.  So, If you’re a Seahawks fan, definitely add these to your game day snack roster. Ha ha… see what I did there? Everyone have a great Super Bowl weekend!

Browned Butter Espresso Blondies

Ingredients
  • 1 stick of butter
  • 1 cup of light brown sugar
  • 1 egg
  • 1 tsp vanilla
  • Pinch of salt
  • 2 tbsp espresso powder
  • 1 cup of all-purpose flour
  • ½ cup semi-sweet chocolate chunks
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Butter an 8×8 pan or cover with parchment.
  3. In a small sauce pan, melt butter over medium heat. Stir butter constantly until it is an evenly golden brown color, be careful not to burn!
  4. Mix browned butter with brown sugar and beat until smooth. Beat in egg, vanilla, and espresso powder.
  5. Add salt and flour, stir to combine.
  6. Add in half of the chocolate chunks and stir to evenly distribute.
  7. Spread dough in the bottom of the pan, mixture will be thick like a cookie dough, but just press evenly in the bottom.
  8. Press in the remaining chocolate chunks on top.
  9. Bake in preheated oven for 20-25 minutes, being careful not to over-bake.
  10. Let cool on a baking rack until totally cool. Cut in squares (or football shapes!) and enjoy!
