There are few things as christmassy fudge.  I always look forward to trying everyones different recipes each year. It seems like they all have something unique about them and are always delicious!  This year, I was determined to create a fudge recipe that has not been done yet.  That being said, I present to you Chocolate Coconut Creme Fudge!  I know…I know, coconut is not the most common of Christmas flavors, but sometimes we need a break from the peppermint bark. Right?  If you are a fan of almond joy candy bars…then this fudge is right up your alley!  You seriously need to try this, not to mention it only takes like 10 minutes make!

Chocolate Coconut Creme Fudge

Serves: 64 inch pieces
Ingredients
  • 6 tbsp unsalted butter
  • 1/4 cup cream of coconut
  • 2 tbsp milk
  • 2 tsp coconut extract
  • 1 tsp vanilla
  • 16 oz confectioners sugar
  • 1/4 cup semi-sweet chocolate chips
  • 1/4 cup toasted coconut
  • 1/4 cup toasted sliced almonds
Instructions
  1. Combine butter, cream of coconut, milk, coconut and vanilla extracts, and confectioners sugar in a medium saucepan over low heat. Wisk everything together until butter is melted and smooth. Pour half of the mixture into an 8×8 baking dish, lined with parchment paper and put in the fridge while you finish the rest. Return the other half to the stove and add the chocolate chips. Wisk over low heat until the chocolate is melted. Working quickly, spread the chocolate layer over the top of the plain coconut layer. Top with toasted coconut and almonds. Chill in the fridge until hardened. To avoid the fudge from getting soft, keep in the fridge until ready to serve
Notes
This fudge is so sweet and rich, I like to make it in an 8×8 so that is it thin and bite sized. But, if you prefer thicker fudge try making it in a loaf pan![br][br]Creme of Coconut is what is used to make Pina Coladas and can be found with all of the other drink mixers. Do not substitute for coconut milk!
