I think that we all go through phases where we settle in on obsessing with one dish or ingredient. For me, it’s usually avocados (who am I kidding, I’m obsessed all day, every day), or smoked salmon, or grapefruits. But, Lately my focus has been on sweet potatoes. These Crispy Sweet Potato Kale Cakes have taken over my world! They’re packed with nutrients, budget friendly, and oh-so versatile. Todays recipe is a twist on a classic recipe, usually made with leftover white mashed potatoes, but using sweet potatoes instead makes the dish way more healthy and flavorful. Not to mention there is sneaky bits of kale sprinkled in. Yum!
- 2 cups of peeled, cubed, boiled, and drained sweet potatoes
- 1/2 cup frozen kale, defrosted and squeezed dry with a clean kitchen towel
- 1 clove minced garlic
- 1 egg
- 1 tablespoon flour
- 1/2 tsp of salt
- 1/4 tsp pepper
- 1 tbsp olive oil
- Begin by mashing your sweet potatoes with a hand masher or fork until a creamy consistency.
- Combine sweet potatoes, kale, egg, flour, salt, pepper, and garlic in a bowl and mix until everything is incorporated.
- Section the mixture into sixths and form into even sized patties.
- Heat oil in a skillet over medium-high heat.
- Fry potato mixture in skillet, flipping over after 5 minutes to brown the other side. Transfer to a platter and serve warm!

Didn't come out as expected...but delicious...Definitely worth another attempt....

Thanks, Kevin! I think these would be great in the air fryer! If you think the mixture seems too wet when everything is mixed, you can add another tbsp of flour or so. Also, feel free to have fun with spices! I wanted to keep these pretty basic, but I love adding a bit of chipotle chili powder to mine.

we loaded up in Kale...messed up and added oil to mixture...will try in a airfryer next in scoop form KjS
