Dare I say, there’s nothing better than a DIY Queso Bar of steaming hot cheese with your favorite tortilla chips. In my opinion, there’s no better way to make queso than with the classic ingredients of Velveeta Original Cheese and Ro*Tel Mild Diced Tomatoes & Green Chilies.

Today, I’m going to show you how you can take the traditional Velveeta and Ro*Tel queso and pair it with two twists on the recipe for the ultimate queso bar.

I certainly can’t say that I got my love of cooking from my dad, but the one dish that he makes religiously is slow cooker queso with Ro*Tel and Velveeta. He has made it my whole life. Whether it’s for a Halloween party, 4th of July or just a random poker night, my mom always enlists my dad to head to Walmart and pick up the ingredients to provide his signature queso. I always thought that this was some genius concoction of his own design, but it turns out that it’s a classic combination that so many people adore… and for good reason.

For my queso bar, I chose to prepare the traditional queso alongside a version with Velveeta, Ranch Style Beans, corn and red peppers. I also made a fun twist with Velveeta, spinach, artichokes, and Oscar Mayer Real Bacon Bits. Let’s just say, they were all a big hit. Like my dad, I picked up everything I needed at my local Walmart and I was in and out in a flash, ready to get home and start my epic night of queso consumption. All of the ingredients were located so closely together that I could run through the aisle and pick up what I needed with ease. When you know queso is in your future, time is of the essence. I love using Velveeta for my queso because it’s so creamy and melts without the help of anything else. Plus, it has that recognizable flavor that everyone knows and loves. Ro*Tel is the perfect addition because it adds a juicy bite with a hint of spice that begs to be perched on top of a tortilla chip. I had so much fun coming up with a couple of variations, and I know you’re going to love them as well!

Basic Queso

Ingredients
  • 1 lb (16 oz.) Velveeta Original Cheese
  • 10 oz can Ro*Tel Mild Diced Tomatoes & Green Chilies
Instructions
  1. Combine ingredients in microwaveable bowl.
  2. Microwave on HIGH 5 min. or until Velveeta is completely melted and the mixture is well blended, stirring after 3 minutes.

 

Southwestern Ranch Queso

  • 1 lb (16 oz.) Velveeta Original Cheese
  • 15 oz can Ranch Style Beans
  • 10 oz can Ro*Tel Mild Diced Tomatoes & Green Chilies
  • ¼ cup frozen corn
  • ¼ cup diced red bell pepper
Instructions
  1. Combine ingredients in microwaveable bowl.
  2. Microwave on HIGH 5 min. or until Velveeta is completely melted and the mixture is well blended, stirring after 3 minutes.

 

Spinach, Artichoke, and Bacon Queso

  • 1 lb (16 oz.) Velveeta Original Cheese
  • 4.5 oz Oscar Mayer Real Bacon Bits
  • 10 oz can Ro*Tel Mild Diced Tomatoes & Green Chilies
  • ½ cup frozen spinach
  • ¼ cup canned artichoke hearts, drained and chopped fine

  1. Combine ingredients in microwaveable bowl.
  2. Microwave on HIGH 5 min. or until Velveeta is completely melted and the mixture is well blended, stirring after 3 minutes.
