How to make Easy Egg Bites in Bread Bowls

To make the easy egg bites in bread bowls, simply cut a hole in the top of each roll and scoop out the inside to make room for the egg mixture. Next, blend together eggs, cottage cheese, cheese, and seasonings in a blender. Stir in any additional fillings you like, such as diced vegetables or cooked bacon or sausage. Pour the egg mixture into the bread bowls and bake in the oven over a water bath until the eggs are set. 

Why a water bath?

Steam is essential to getting that fluffy classic egg bite texture. For this recipe, you’ll place a rack on the very bottom of your oven and one in the middle. Once the oven is preheated, place an empty oven-safe dish on the bottom rack and the egg bowls on the middle rack. You’ll then pour boiling water on the baking sheet and close the oven. As the egg bites bake they will also be filled with the steam from the water. 

Reheating

To reheat, I microwave for 30-45 seconds until warm.

Easy Egg Bites in Bread Bowls

These Starbucks-Style Easy Egg Bites in Bread Bowls are a fun addition to your Easter brunch spread or as a quick on-the-go breakfast!

Ingredients

  • 12 Rhodes Bread Warm & Serve Soft White Rolls, thawed slightly
  • 2 links of fully-cooked chicken breakfast sausage, diced
  • 6 large eggs
  • ½ cup low-fat cottage cheese
  • ¼ cup shredded white cheddar cheese
  • ½ cup shredded Gruyere cheese
  • 1 tsp kosher salt
  • ½ tsp garlic powder
  • fresh chopped chives, optional

Instructions

  1. To make the bread bowls, simply cut a hole in the top of each roll and scoop out the inside to make room for the egg mixture. I like to do this when the rolls are still a little bit frozen so that they're easy to cut into while keeping their shape. Place the hollowed rolls on a baking sheet and set aside while you make the filling.
  2. Add the eggs, cottage cheese, white cheddar cheese, Gruyere, salt, and garlic powder in a high-powered blender. Blend on medium-high until very smooth.
  3. Evenly distribute the sausage or other mix-ins at the bottom of each roll. Next, evenly distribute the egg mixture into each of the egg bite molds until just full.
  4. Carefully prepare the steam bath by placing a baking sheet on the bottom rack of the oven. Boil water on the stovetop or kettle and carefully pour the boiling water onto the baking sheet.
  5. Carefully place the egg bites on the center rack above the steam bath. Bake until the egg bites have just set and the rolls are brown, 20-25 minutes.
  6. Be sure to let the sheet pan with the water cool completely before removing it from the oven.
  7. Top the egg bite bowls with fresh chopped chives, if desired, and serve warm.
