Kimchi Zoodles with Creamy Avocado Sauce

  • 1 tbsp coconut oil
  • 1 medium zucchini, spiralized
  • ½ cup kimchi
  • ½ ripe avocado
  • ¼ to ½ cup vegetable broth
  • 1 clove minced garlic
  • 1 tbsp chopped cilantro
  • salt and pepper to taste
  1. Blend avocado, garlic, and broth in a blender or food processor. Start with ¼ cup and stream in more if needed. Sauce should be pourable but still thick.
  2. Melt coconut oil over medium heat. Add noodles and cook only for a minute or two. It's important that when you are cooking zucchini noodles that you do not overcook. Doing so will make your dish watery and mushy. Add Kimchi and toss until warmed through 1-2 minutes.
  3. Pour in the avocado sauce and toss until the noodles are coated.
  4. Top with chopped cilantro if using and serve!
