Mandarin Mint Spritzer

Serves: 3 drinks
For Mandarin Mint Simple Syrup
  • ½ cup sugar
  • ½ cup water
  • 10-15 mint leaves
  • rind of one mandarin
For the Spritzer
  • 1 can of orange, mandarin, or tangerine flavored sparkling water
  • mint sprigs and mandarin wedges, to serve
For Mandarin Mint Simple Syrup
  1. Combine all of the ingredients in a small saucepan over medium-high heat. Bring to a simmer and let the mint and mandarin rind steep until the sugar is dissolved. Turn off and set aside to cool.
For the Spritzer
  1. Fill a rocks glass with crushed ice. Add sparkling water till the glass is ⅔ full. Sweeten to taste with a couple of tbsps of the mandarin mint simple syrup, and garnish with mint and mandarin wedges. Serve cold.
You will likely have leftover simple syrup. You can keep it in a jar in the fridge for up to a week.
