Quick and Easy Tuna Melt

Serves: 4 servings
  • 10 oz chunk light albacore tuna, drained
  • 2 tbsp red onion, minced
  • 2 tablespoons mayo
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon capers, drained
  • ⅛ teaspoon salt
  • ¼ tsp red pepper flakes
  • Freshly ground pepper, to taste
  • 2 Roma tomatoes, sliced
  • ½ cup shredded sharp Cheddar cheese
  • 4 slices whole-wheat bread, toasted (I prefer slices of Artisan bakery-style bread)
  1. Preheat broiler to high.
  2. Combine tuna, red onion, mayo, lemon juice, capers, salt, red pepper flakes and pepper in a medium bowl. Spread ¼ cup of the tuna mixture on each slice of toast and top with tomato slices. Sprinkle the tops with about 2 tablespoons cheese each. Place sandwiches on a baking sheet and broil until the cheese is bubbling and golden brown, 3 to 5 minutes. **Keep a VERY watchful eye on them because they can and will burn in an instant.
