Blood Orange Vanilla Bean Paloma

  • ½ a vanilla bean, scraped of seeds
  • 1 teaspoon granulated sugar
  • 2 ounces tequila
  • ½ ounces freshly squeezed blood orange juice
  • 6 ounces blood orange soda such as San Pellegrino or Italian soda
  • Ice, to serve
  1. Combine the chopped vanilla bean with the sugar on a small plate and, using your fingers, crush the mixture until well combined.
  2. Rub the cut blood orange along the rim of a highball glass. Then roll the rim into the vanilla sugar. Add in a few ice cubes, a pinch of the vanilla sugar, and then top with the tequila, blood orange juice, and soda and stir. Serve immediately.
