Vegan Tex-Mex Jackfruit Totchos

  • 1 (28-oz.) bag frozen tater tots
  • 1 (10-oz.) package The Jackfruit Company Tex-Mex Jackfruit
  • 1 (15-oz.) can black beans, rinsed and drained
  • ½ cup frozen corn, defrosted
  • 1½ cups vegan shredded cheddar cheese
  • ½ cup diced tomatoes
  • ¼ cup diced green onions
  • 1 large avocado, diced
  • chopped cilantro, for serving
  1. Bake or fry the tater tots per the package instructions then arrange them in a single layer on a foil-lined baking sheet.
  2. While the tots are cooking, prepare The Jackfruit Company Tex-Mex Jackfruit according to the package directions.
  3. Preheat the oven to 350°F.
  4. Sprinkle the jackfruit over top of the tater tots then follow with the black beans corn and vegan cheddar cheese. Bake the tater tot nachos until the cheese is melted, 3 to 5 minutes.
  5. Remove the tater tot nachos from the oven and top them with the tomatoes, green onions, and avocado. Serve immediately with a sprinkle of cilantro, if desired.
