Swordfish Proven├žal

  • 2 5 oz swordfish steaks
  • ½ cup chopped onion
  • 1 clove of garlic, minced
  • ½ cup white wine
  • 1 tbsp tomato paste
  • ½ cup cherry tomatoes, halved
  • 2 tsp herbs de provence
  • salt and pepper to taste
  1. Pre-heat medium saute pan on medium high heat and coat pan with olive oil.
  2. Salt and pepper both sides of the swordfish and sear until golden brown, about 2 minutes. Flip and sear the other side and cook until totally opaque, 2-3 more minutes.
  3. Remove fish from pan and set aside while you prepare the sauce. Turn heat down to medium.
  4. Add a tbsp more olive oil if necessary and saute onions and garlic until translucent, about 5 minutes.
  5. pour in wine and simmer, reducing by about half. Whisk in tomato paste until evenly distributed and add herbs de provence.
  6. Add cherry tomatoes and break them up with a wooden spoon.
  7. Simmer sauce for 3-5 more minutes until thickened and tomatoes are deflated.
  8. Taste sauce and season with salt and pepper if needed.
  9. Top swordfish with sauce and enjoy!
