Greetings! We’re definitely in the doldrums of winter, the cold and grey days that follow christmas are sure to get you down in the dumps and feeling lazy. One of my favorite snacks for when I’m feeling sluggish is the Energizing Baked Trail Mix. Problem is, the tiny bags you can buy at the grocery store are usually packed with preservatives and candy, and can push upwards of $10 a bag in some cases. When you make your own batch, you can pick all of your favorite ingredients and make a huge amount for a fraction of the cost. Feel free to stray from this recipe and add your favorite dried fruits and nuts, I already had all of these nuts in the pantry but I would love to add some pistachios, My favorite!
- 2 cups whole roasted unsalted almonds
- 3/4 cup roasted chopped pecans
- 3 tbsp pumpkin seeds
- 1 cup chopped apricots
- 1/2 cup puffed millet
- 1 tbsp almond meal
- 1 tbsp chia seeds
- 1/2 cup honey
- 1/4 cup orange juice
- 1/4 tsp salt
- 1 tsp vanilla
- 1/2 cup dark chocolate covered blueberries
- Preheat oven to 325 degrees.
- Add nuts and apricots to large bowl; breaking apart clumps of fruit to distribute evenly throughout mix. Add puffed rice/millet, chia seeds, and almond meal. Stir to combine; set aside.
- In a medium sauce pan, combine honey, orange juice, salt, and vanilla over medium-high heat. Cook, stirring frequently until bubbling and well combined. 2-5 minutes.
- Immediately, pour mixture over nut mixture, stir until evenly coated. Quickly transfer to greased/sprayed 9×13 pan, use hands to spread mixture evenly in pan. Roast in preheated oven for 25 minutes until golden.
- Let mixture cool completely and then add the chocolate covered blueberries. Store in an air tight container for up to a week.
