This MAY be the most simple recipe I have ever uploaded, so much so I almost feel silly for doing it. But…I am, because I think that a lot of people may often find themselves stuck in breakfast ruts. Breakfast is the most important meal of the day, so I love to include lots of vegetables, whether it be in an omelet or even a green smoothie. This simple Farmers Market Breakfast Skillet includes sautéed vegetables topped with eggs of your choice. I am loving preparing basted eggs at the moment and would highly recommend them if you have never tried preparing them that way! We are just getting started with farmers market season, and this would be a great dish to create using local vegetables and eggs. Hope you enjoy!
- 2 tbsp olive oil
- 2 cups baby spinach
- 1 cup sliced mushrooms
- salt and pepper to taste
- 2 tbsp butter
- 4 eggs
- 1 tbsp sprouts
- salt and pepper to taste
- In a medium sized skillet, heat olive oil over medium heat. Sauté mushrooms and spinach until spinach is wilted and mushrooms are tender. Season with salt and pepper to taste and add sprouts. I would highly recommend broccoli sprouts!
- In another medium sized skillet, melt butter and prepare your eggs as you wish.
- Serve your eggs over top of your vegetable mix and enjoy!

I love what is in this recipe, but i can't make it until I know the nutrition facts. I am a type II diabetic and my husband has had a heart attack and is on a very strict diet. Please can you help us out? Thanks so much, Jon and Kay

Hi, Kay! I went ahead and added the nutrition information for a serving of this dish at the bottom of the post! In your case, I would maybe suggest using a light cooking spray instead of the butter for the eggs and you'll also knock off about 100 calories! Hope you enjoy!
