Garlicky Roasted Cauliflower and Beet Dip

To me, summer is dip season. As a kid, summers were filled with hot days of playing in the pool, only stopping to periodically dip a Frito in some cheese dip or ranch. As an adult, the pool playtime is still roughly the same, but the snack has changed to more nutritious options like hummus and veggies (growing up is the worst), specifically this Garlicky Roasted Cauliflower and Beet Dip has made the list. So many dip recipes are filled with some sort of dairy, making it not the best option for sitting outside all afternoon. Fortunately, this dip is dairy-free, beautiful, and did I mention delicious?! Even those that think that they are not beet fans will devour this dip. It’s fresh, flavorful, and full of nutrients that will keep you playing all day long!

Garlicy Roasted Cauliflower and Beet Dip

Ingredients
  • 1 head of cauliflower, trimmed into florets
  • 2 beets, trimmed and chopped in 1 inch cubes
  • 5 cloves of garlic, peeled
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • olive oil or coconut oil spray
  • olive oil and chopped parsley to serve
  • fresh veggies to serve
Instructions
  1. Preheat oven to 400 degrees Fahrenheit
  2. Spray a cookie sheet with oil spray and add cauliflower florets and beet cubes. Lightly spray the tops of the vegetables with more oil spray.
  3. Roast vegetables for 25 minutes, then remove cookie sheet to flip vegetables and add garlic cloves. Roast for 20 minutes more, allowing to cool before blending.
  4. Add all of the contents of the cookie sheet to your blender, along with the lemon juice, olive oil, and salt and pepper.
  5. Blend on medium, stopping to scrape down the sides of the blender a few times as needed. Blend until everything is smooth and creamy, you may need to add more olive oil if dip is too thick.
  6. Transfer to a bowl and refrigerate for at least an hour before serving.
