Hearty Summer Panzanella

Right now, In the heart of August,  farmers markets are flourishing with every type of fresh, organic vegetable and herb you can think of.  My advice is to hit them up as much as you possibly can while the bounty is at its peak so you can make this Hearty Summer Panzanella.  You can pick up almost all of the ingredients for this recipe at your local farmer’s market, especially the plump tomatoes, fragrant basil, and juicy cucumber.

I love making panzanella because it is so versatile.  As long as you have a big loaf of crusty italian bread, and fresh tomatoes, you have a panzanella.  In this version, I added fresh mozzarella and salami to give it a heartier and more meal-like feel, and olives…because…olives.  I could totally live off of this stuff.  If you’re tired of making pasta salads for your outdoor summer get-togethers, this is a great quick and easy alternative.
