Even though I’m a recipe developer and constantly testing out new ideas, sometimes I have a mad craving for a dish that I’ve had a million times.  If you’re anything like me, spaghetti is a meal that you always come back to time and again.  

Italian Salmon Meatballs

A simple marinara sauce, some hearty whole-wheat pasta, and Italian meatballs are all you need to create the perfect classic spaghetti dish.  However, IF you want to take it to the next level you can make these addictive Italian-style salmon meatballs for added flavor complexity and healthfulness.  

We all know the amazing health benefits, but sometimes it’s easy to get stumped on how to prepare salmon.  If you love a classic spaghetti but want to incorporate a different element, these meatballs are the way to go.

Italian Salmon Meatballs

Prep Time: 15 minutes
Cook Time: 35 minutes
Total Time: 50 minutes

Ingredients

  • 1 pound skinless salmon cut into chunks
  • ½ medium onion, grated
  • ¼ cup panko breadcrumbs
  • 3 tablespoons minced fresh Italian parsley
  • 1 egg white
  • 2 garlic cloves, minced
  • ¾ teaspoon salt
  • ½ teaspoon ground pepper
  • 2 tablespoons grated parmesan cheese
  • ½ teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (more if you like spicy)
  • 1/4 teaspoon fennel seeds

Instructions

  1. Preheat the oven to 350ºF. Coat a large baking sheet with cooking spray.
  2. Place the salmon in the bowl of a food processor. Pulse until finely chopped, scraping down the sides as necessary.
  3. To the salmon, add the onion, breadcrumbs, parsley, egg white, garlic, salt, pepper, parmesan, Italian seasoning, red pepper flakes, and fennel seeds. Pulse in food processor several more times to combine.
  4. Using a 2 tablespoon portion of the salmon mixture (I used a cookie scoop), form meatballs by rolling between the palms of your hands. Place the meatballs on the prepared baking sheet, spacing evenly.
  5. Bake until the meatballs are firm to the touch and cooked through 15 to 18 minutes.
  6. Serve with your favorite marinara sauce and pasta!

the temp and cooking time are WAY off on this. try 400-415 for 12-15 minutes then flip and bake another 8 minutes.
