Kimchi Zoodles with Creamy Avocado Sauce

 

As someone who develops recipes, I often find myself putting together meals for myself that I deem entirely too easy to be shared with others.  One day, while licking my plate clean, I thought to myself, “Paige, you enjoy Kimchi Zoodles with Creamy Avocado Sauce so much, it’s only fair that you share it with the world.”  It’s vegan, paleo, gluten-free, dairy-free, and literally takes five minutes to prepare.  Kimchi is a traditional fermented Korean side dish that is found in many grocery stores and is made of vegetables and includes a variety of seasonings. It is spicy, sour, crunchy, and utterly ADDICTIVE, not to mention amazing for your digestive health.  Take my word for it on this one, this combination of flavors is outstanding and almost too healthy to be true.

Kimchi Zoodles with Creamy Avocado Sauce

Ingredients
  • 1 tbsp coconut oil
  • 1 medium zucchini, spiralized
  • 1/2 cup kimchi
  • 1/2 ripe avocado
  • 1/4 to 1/2 cup vegetable broth
  • 1 clove minced garlic
  • 1 tbsp chopped cilantro
  • salt and pepper to taste
Instructions
  1. Blend avocado, garlic, and broth in a blender or food processor. Start with 1/4 cup and stream in more if needed. Sauce should be pourable but still thick.
  2. Melt coconut oil over medium heat. Add noodles and cook only for a minute or two. It’s important that when you are cooking zucchini noodles that you do not overcook. Doing so will make your dish watery and mushy. Add Kimchi and toss until warmed through 1-2 minutes.
  3. Pour in the avocado sauce and toss until the noodles are coated.
  4. Top with chopped cilantro if using and serve!
