A quick and easy sauce to whip up that pairs great with the whole wheat pitas and herbed lamb burgers that can be found in my previous posts.
Lemon Tzatziki

Ingredients
- ½ of an English Cucumber
- 1 clove of garlic
- Zest of 1 lemon
- 1 tablespoons of chopped dill
- 2 tablespoons of chopped mint
- 1 8 oz container of Greek Yogurt
- Salt and pepper to taste
Instructions
- Using a handheld grater or (preferably) a microplane, grate the ½ cucumber into a medium sized bowl. Follow that up by zesting the lemon and grating the garlic using the same tool. Add in the chopped herbs and greek yogurt. Stir to combine. I used about a ½ teaspoon of salt and ¼ teaspoon of pepper, but definitely add a small amount at first and season to your taste.

Notes
I would recommend using FAGE yogurt because it has an authentic, thick, Greek yogurt flavor and texture.[br]Classic Tzatziki is a bit more dill heavy, but I prefer a little less in mine. If you are a dill lover than by all means up the dill and lower the mint amounts![br]If you do not use an English cucumber you will need to peel and seed the standard cucumber.
