It’s that time of year where the two best NFL teams battle it out on the field, in between extremely overpriced commercials and an über censored halftime show. I’m talking about the Superbowl of course. This year it’s the New England Patriots against the Seattle Seahawks, both of which are home to a rich culinary scene. I decided to come up with a couple of recipes that represents each teams regional cuisine. For New England I just had to do a Lobster Rolls with Roasted Corn and Lime, you can go a cheaper route if you wish and use crab or shrimp as well and it would be just as delicious! Stay tuned later in the week to see what I come up with for Seattle’s dish!
- 12 oz cooked lobster meat
- 1/4 cup mayonnaise
- 1/2 cup roasted corn
- 1 tbsp chopped chives
- 2 tbsp lime juice
- 2 dashes of hot sauce
- salt and freshly ground pepper
- Butter lettuce to serve
- 4 Brioche or Hawaiian rolls, buttered and toasted
- In a bowl, combine lobster meat, mayo, lime juice, corn, chives, hot sauce and salt and pepper to taste.
- Place in refrigerator for 10 minutes to allow flavors to combine well.
- Place one leave of lettuce in a buttered and toasted roll, and fill with lobster salsd.
