Hello Again!  I’m not going to bore you with a witty story today, because I am trying to throw as any recipes at you before Thanksgiving as possible!  These Phyllo Cups with Brie and Jalapeño Cranberry Chutney are to keep everyone from nibbling on the turkey before dinner!  Crispy puff pastry cups, creamy brie, and the AMAZING jalapeño cranberry chutney….so delicious and quick and gets you ready for the main event!

Phyllo Cups with Brie and Jalapeño Cranberry Chutney

Ingredients
  • 2 cups cranberries
  • 1 jalapeno, seeds and ribs removed and minced fine
  • 1 lime, zested then juiced
  • 1/4 cup water
  • 1/2 cup sugar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 8 oz of brie
  • 2 boxes of prepared phyllo cups, 30 total
Instructions
  1. In a medium sauce pan, combine cranberries, jalapeno, lime zest and juice, water, sugar, salt and pepper and bring to a boil.
  2. Reduce heat to a simmer and cook for 10-15 minutes, stirring frequently. Set aside to cool once it reaches desired consistency, similar to a jam.
  3. Preheat oven to 350 degrees Fahrenheit.
  4. Remove the phyllo cups from the box and place them on a baking sheet.
  5. Slice off the top and bottom rind of the brie and slice into 1 inch cubes.
  6. Place one cube of Brie inside each phyllo cup, and top with about 1/2 a teaspoon of the chutney.
  7. Place in the oven for 5 minutes, just until the brie starts to melt.
  8. Serve warm.
