Pineapple Jalapeño Whiskey Sour

Take your summer cocktail hour up a notch with this Pineapple Jalapeño Whiskey Sour that’s so easy and delicious! 

When I want to sip on a drink, I’m usually a wine girl… except in the dog days of summer. When the weather is hot, I usually opt for a refreshing cocktail, and this Pineapple Jalapeño Whiskey Sour fits the bill perfectly.

Since we’ve been going out to eat again, we have enjoyed more than our fair share of al fresco dining. I’ve been ordering on the more adventurous side of the cocktail menu and I’ve been loving the change! I’m a sucker for a good sweet and salty moment in my drink or an over-the-top presentation. One of the most memorable cocktails I’ve tried lately was comprised of Gin, Luxardo Amaro Abano, Blueberry-Balsamic Shrub, Cardamon Bitters, and Lime. Holy smokes, it was divine and so unique.

My new foray into dining (and drinking) out has made me want to venture into the liquor cabinet to try some new variations myself. This Pineapple Jalapeño Whiskey Sour was the first of my experiments and hit. the. spot. let me tell you. Here’s how to make it!

Pineapple Jalapeño Whiskey Sour Ingredients & Subs

whiskey — I used bourbon, but rye or a whiskey blend would be great as well. 
pineapple juice
lemon juice — Fresh, please! 
simple syrup — You could also infuse the jalapeño in here if you like! Simple syrup is equal parts sugar and water dissolved to a liquid.
2-4 slices fresh jalapeño, + more for garnish — You can add as little or as much jalapeño as you like! I used two slices for mine and there was just enough heat to give a smokey quality, but it wasn’t overly spicy. 
Optional: pineapple wedge + leaf for garnish and hot honey + Tajin to rim the glass!

How to Make Pineapple Jalapeño Whiskey Sour

Pour the whiskey, pineapple juice, lemon juice, simple syrup, and 2-4 jalapeño slices (depending on your heat preference) in a cocktail shaker filled with ice. Cover and shake vigorously for 20-30 seconds.
Strain into a glass over ice.
Garnish with a pineapple wedge, pineapple, leaf, and a jalapeño slice! Serve immediately.

Optional: Rim your glass with hot honey (or plain honey) and Tajin!

**Tip: Muddle your jalapeño in your shaker before adding the ice to get those spicy juices flowing!

What whiskey should I use for a Whiskey Sour?

Listen, your house your rules. You know I’m a Kentucky girl through and through so Bourbon is pretty much the most used spirit in my house. That being said, there are so many options!

  • Bourbon: A sweet bourbon with light citrus notes makes for a phenomenal sour. The natural sugars in bourbon is a great balance with the tart citrus and in this case, pineapple. 
  • Rye whiskey: While bourbon is well-rounded and sweet, Rye is spicy and dry. Since this verison of a whiskey sour is naturally a bit more sweet from the pineapple and a touch spicy from the Jalapeño, Rye may actully be the better choice here (please, don’t tell bourbon.). 

Heck! If you’re a margarita-lover, go for 1 1/2 ounces silver tequila and 1 ounce orange liqueur and call it a day! 

Can I use egg white with this Whiskey Sour?

Absolutely! I love a classic egg white whiskey sour (sometimes called a boston sour) when I’m feeling fancy. I will say, in the summer, when I’m wanting a refreshing cocktail in the sun, I’m going to omit the egg. If I’m snuggled at home watching HBO and I want to class up my cocktail hour, egg white it is. You can do whatever you like, and if you do choose to add an egg white, here’s how. 

  • In a whiskey sour with an egg white, you’ll do a dry shake. Which basically means you’ll shake the ingredients before adding ice. Then you’ll add the ice and shake again. This way, you can shake some foam into the egg white so you get that lovely whipped top.

Ingredients

  • 2 ounces whiskey
  • 1 1/2 ounces pineapple juice
  • 1 ounce lemon juice
  • 1 ounce simple syrup
  • 2-4 slices fresh jalapeño, + more for garnish
  • pineapple wedge and leaf for garnish, hot honey + tajin to rim

Instructions

  1. Pour the whiskey, pineapple juice, lemon juice, simple syrup, and 2-4 jalapeño slices (depending on your heat preference) in a cocktail shaker filled with ice. Cover and shake vigorously for 20-30 seconds.
