Prosciutto Green Goddess Quesadilla

Being that my fiancé works out of town a lot, there are many nights that I have to fend for myself for dinner.  My go-to solution to this conundrum is making a big batch of  that is fridge friendly and reheating it throughout the week.  While I do love a good leftover, sometimes I just want a meal that is quick and easy and is simple to prepare for just one person.  This quesadilla hits all of the major points for me and is one of my favorites for when I’m feeling a bit on the lazy side.  I mean, at least you have all of the major food groups in one handheld meal, right?!  Not to mention the tortilla is a vehicle for pretty much all of my favorite things.  Pesto, avocado, goat cheese, mozzarella, spinach and of course, my number one favorite, prosciutto.   If you’re having a quiet night in all by yourself, whip up this quesadilla, pour yourself a glass of chardonnay, and binge watch True Detective…because Colin Farrell…and cheese.

Prosciutto Green Goddess Quesadilla

Serves: 1 quesadilla
Ingredients
  • 2 spinach tortillas
  • 1 tbsp prepared pesto
  • 1/2 of a ripe avocado, mashed
  • 2 tbsp crumbled goat cheese
  • 1/2 cup shredded mozzarella
  • 3 slices of prosciutto
  • 3/4 cup baby spinach
Instructions
  1. On one tortilla spread pesto to the very edge, do the same with the mashed avocado on the other tortilla.
  2. Sprinkle mozzarella on the avocado tortilla, and the goat cheese on the pesto tortilla.
  3. Arrange baby spinach on top of the mozzarella and arrange the prosciutto evenly over the goat cheese.
  4. Carefully flip over the prosciutto tortilla onto the spinach and mozzarella tortilla.
  5. Preheat a medium non-stick skillet on medium low. Warm the quesadilla in the skillet until cheese is melted and the filling is warmed through, about 5 minutes, carefully flipping once. Serve warm!
