I have a handful of recipes in my arsenal that I love to break out when I really want to treat people to an explosion of flavor. Some are more labor-intensive than others, but none are as easy and delicious as this Slow Cooker Chicken Dijon using Holland House Cooking Wine.

Not everyone can keep wine constantly in stock for cooking purposes. I love to keep a variety of Holland House Cooking Wines on hand to add a splash of flavor to dishes, even when I don’t really have a recipe in mind. 

For this recipe, the Holland House White Cooking Wine goes perfectly with the chicken and dijon and adds a brightness even through the slow cooking process. When I want an ingredient that adds acidity and intricate to my dish, I always reach for a Holland House Cooking Wine. It’s a go-to pantry staple for me because it can elevate everyday recipes thanks to its quality ingredients and unmatched flavor. 

After the holidays, we often feel tired of the same old stagnant flavors, and Holland House Cooking Wines are a great way to add a punch to any meal. This Slow Cooker Chicken Dijon, in particular, is one of those flavorful recipes that you’ll think about over and over again and will make for guests the first chance you get.

Ingredients & Subs

Holland House White Cooking Wine — The flavor of the Holland House White Cooking Wine pairs so nicely with the notes of dijon, dill, capers, and gruyere in this dish!  

Dijon mustard — I’ve made this with a combination of creamy dijon and whole grain mustard and it’s so good! 

White onion — 2 shallots in place would be fab.

Chicken thighs — You can use bone-in or boneless. If you choose to get the skin on, I would sear in a pan before adding to the Crock-Pot to render off some of the fat first. 

Capers — You can omit them if you like but they add such a nice tangy bite! 

Butter — Salted or unsalted is fine!

Gruyere cheese — Try grated Parmesan.

Dill — Fresh tarragon is so amazing in this as well!

How to Make

In the bowl of your Crock-Pot, combine the Holland House White Cooking Wine, cream, dijon mustard, onion, garlic, and salt and pepper.

Season the chicken with additional salt and pepper. 

Add the chicken to the slow cooker along with the butter capers and butter.

Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours. During the last 30 minutes of cooking, add the Gruyere and dill, gently tossing to combine. Remove the onion quarters and discard.

Serve the chicken over mashed potatoes or rice and spoon the creamy mustard sauce over top the chicken. Serve with additional dill and Gruyere.

How to store

This Slow Cooker Chicken Dijon can be stored in an air-tight container in the fridge for up to 4 days or frozen for up to 6 months.

Ingredients

  • 1/3 cup Holland House White Cooking Wine
  • ⅓ cup heavy cream
  • ⅔ cup chicken stock
  • 4 tablespoons dijon mustard
  • 1 white onion, quartered
  • 2 cloves garlic, minced or grated
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 pounds boneless chicken thighs
  • 3 tablespoons capers
  • 2 tablespoons unsalted butter
  • 1/3 cup freshly grated Gruyere cheese
  • 3 tablespoons fresh dill
  • mashed potatoes or rice, for serving

Instructions

  1. In the bowl of your Crock-Pot, combine the Holland House White Cooking Wine, cream, chicken stock, dijon mustard, onion, garlic, and salt and pepper.
  2. Season the chicken with additional salt and pepper. 
  3. Add the chicken to the slow cooker along with the butter capers and butter.

This is worth trying, folks! I was a little uncertain at first about the unfamiliar flavors of capers, dill & gruyere but took the plunge anyhow. Glad I did. I have to be cautious about dairy, so I subbed 1/2 & 1/2 with broth for the heavy cream; also, we had bone-in thighs instead of boneless. Quite delish served over barley with lots of juice, too!
