There are many food items that you can purchase ready-made at the the grocery store.  Majority of them, I like to prepare at home because they are cheaper and you can better control the ingredients that they contain.  My favorite of these convenience foods to make at home is granola.  Most granola brands are way over priced and it is so easy to make on your own.  It’s not uncommon for a box of granola to push five dollars, while you probably have all of the ingredients already in your pantry!  Within five minutes you can mix together all of the ingredients and have it baking in the oven, all the while engulfing your home with it’s sweet fragrance.  You can use this recipe as a base, and then mix and match ingredients as you please!

Serves: 6 servings
Ingredients
  • 3 cups rolled oats
  • 1 cup slivered almonds
  • 1/2 cup speculoos or biscoff cookies, crushed in a food processor, blender, or coffee grinder
  • 1/4 cup plus 2 tablespoons brown sugar
  • 1/4 cup plus 2 tablespoons maple syrup
  • 1/4 cup vegetable oil
  • 3/4 teaspoon salt
  • 1 cup dried cranberries
Instructions
  1. Preheat oven to 250 degrees F.
  2. In a large bowl, combine the oats, nuts, cookies, and brown sugar.
  3. In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
  4. Remove from oven and transfer into a large bowl. Add cranberries and mix until evenly distributed.
