This Spicy Sweet Potato Bean Dip is a healthy snack that’s perfect for dipping. You’ll want to make sure you have this in the fridge at all times!
You know that sad feeling you always get after Christmas? I feel that way for a few days, and then I realize that now it’s awards show season! Okay, maybe it’s not quite as exciting as the holidays, but I still look forward to it every year. For The Oscars in particular, Matt and I always fix a little spread of appetizers, a cheese board, basically any snacky thing we can find and watch with our predictions in-hand. This year, I plan to stuff my face with this Spicy Sweet Potato Bean Dip.
The Oscar nominations were announced today and you can find them here. So far we’ve only seen one of the Best Picture nominees, but something tells me it’s the only one we’ll need to see. We went to see La La Land this weekend and let me tell you, it’s worth every bit of the hype. Emma Stone is amazing and I want to be her best friend and Ryan Gosling is… well, Ryan Gosling. You’ll laugh, you’ll cry, you’ll want to sing your heart out and live life to the fullest. Go see it! We still plan on watching all of the other nominations before the ceremony, but honestly, it’s going to be hard to beat La La Land for me.
Okay, back to the recipe. This dip was inspired by a store-bought dip I tried recently. As with most things, I thought “I can so make that way better and for less money.” I was right. This dip is spicy but just ever so. It’s sweet from the potato and the beans give it a hummus-esque vibe. I like eating this with toasted naan bread, sliced pepper or cucumber, but tortilla chips would probably be good as well! I’ve been keeping this in the fridge and I love having it on-hand for a quick snack. Plus, it’s really filling. - 1 cup cooked sweet potato*
- 1 14 oz can Great Northern beans, rinsed and drained
- 1 tbsp tomato puree
- 1/4 cup roughly chopped red bell pepper
- Juice of 1 lime
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1 tsp chipotle chili powder
- 1/2 tsp onion powder
- 1/4 tsp cumin
- 1/2 tsp paprika
- 1 tbsp red wine vinegar
- 2 tbsp olive oil
- Combine all of the ingredients in a food processor and puree until well-combined.
- Feel free to add a bit more olive oil or a splash of water to get it to your desired dipping consistency.
