Sundried Tomato Cheese BallThe cheese ball is a classic party appetizer that we all know and love.  If you see a group of your guests gathered around in the kitchen, chances are it is in front of the cheese ball.  Personally, I love them because they can literally be thrown together in just a few minutes and your choice of ingredients are endless! It seems to me, that every person has they’re own unique spin on this dish and I’d like to share mine!

Serves: 1 ball
Ingredients
  • 1 8 oz package of cream cheese, softened to room temperature
  • 1/4 cup sour cream
  • 1 cup finely shredded Italian blend cheese
  • 1/ cup grated parmesan
  • 1/4 grated or very finely chopped onion
  • 1 tbsp sundried tomato pesto
  • 1/2 teaspoon garlic powder
  • 1 tsp lemon juice
  • pinch of crushed red pepper flakes
  • 1/2 tsp salt
  • 2/3 cup diced prosciutto
  • 1/2 pine nuts
Instructions
  1. Place all of the ingredients except for the nuts in the bowl of a stand mixer, and beat on medium until all of the ingredients are incorporated, scraping down the sides of the bowl at least once.
  2. Scrape the mixture onto some plastic wrap and form into a ball.
  3. Let chill in the refrigerator for at least 30 minutes to and hour to harden.
  4. Roll the cheese in the pine nuts until covered and serve with your favorites crackers.
Notes
*Let the cheese ball rest outside of the fridge for about 15 minutes before serving.[br][br]*pine nuts can be expensive, so feel free to use any other nut you wish, sliced almonds would be great![br][br]*prosciutto usually comes in thin slices, but I found these amazing prosciutto cubes in the deli section at kroger. I am addicted to them![br][br]*I like to use a cheese grater on my onion for this recipe. It almost turns it into a paste, that way your guests don’t get big chunks of onion. Try it!
