Sweet Pepper Poppers with Blue Cheese and Bacon

Serves: 10 poppers
Ingredients
  • 10 sweet mini bell peppers
  • 4 ounces (1/2 cup) bleu cheese crumbles
  • 4 ounces (1/2 a pkg) cream cheese
  • 2 slices of maple bacon
  • 1/2 cup panko bread crumbs
Instructions
  1. Preheat oven to 350 degrees fahrenheit.
  2. Fry bacon and reserve about 1 tbsp of drippings. Add breadcrumbs to the drippings and toast until golden brown, 2-3 minutes on medium-low.
  3. Cut peppers in half lengthwise and remove seeds; set aside. In a small bowl, beat bleu cheese and cream cheese until blended, then add crumbled bacon.
  4. Spoon into pepper halves and sprinkle with breadcrumbs.
  5. Bake for 12-15 minutes.
  6. Serve Warm!
