Happy Thursday that feels like a Tuesday! This 4th of July long weekend has gotten my internal clock all messed up, but at least that means there’s only one more day until the weekend! We’re going to be making a trip to Nashville to see the USMNT play Panama in the CONCACAF Gold Cup, and you can bet your bottom dollar that this High-Protein Snack Mix will be joining us for the journey.

To say that we’re excited about this game would be a massive understatement. We’ve got our gaudy USA gear ready and I’m prepping my vocal cords for large amounts of screaming. I bought these tickets for Matt’s birthday back in April, and it’s been a long few months waiting for this day to come. We’re easily excited, okay? I’m guessing that I won’t be able to bring this snack mix into the stadium, but I think we will be really excited when we make it back to the hotel room and it’s waiting for us as a midnight snack.

In my opinion, a good snack mix should be both slightly nutritious and very delicious. I like to make sure that I have a lot of protein, along with whole grains, and maybe some fruits and veggies as well (dried cherries and snap pea crisps totally count). I don’t add any seasoning to mine as I find that the chipotle chickpeas and beef jerky add a ton of flavor, but you can customize this as you see fit! In mine, you’ll find: gluten-free pretzel sticks, popcorn, snap pea crisps, unsalted almonds, dried cherries, cheddar squares, beef jerky, and crispy chickpeas. I find that this blend has a great balance of protein and nutrients to keep you full while you’re on the road, at the beach, or just chilling at home. Happy snacking!

Serves: 7 cups
Ingredients
  • 1 cup unsalted dry-roasted almonds
  • 3 oz beef jerky, ripped into smaller pieces
  • 1/2 cup dried cherries
  • 1/2 cup crispy chickpeas (I use chipotle flavor)
  • 1 cup cheddar squares
  • 2 cups popped popcorn
  • 1 cup pretzel sticks
  • 1 cup snap pea crisps
Instructions
  1. Toss all ingredients in a large bowl until evenly combines. Store in gallon-sized Ziplock bag for easy transport.
