In the summer, I tend to forego my usual hot breakfasts and opt for cold and refreshing meals like overnight oats, smoothie bowls, and yummy parfaits. This Tropical Protein Parfait keeps me full for hours and gives me the energy I need to power through the morning.

Since I’ve been pregnant, one of the many dietary changes I’ve made is adding more protein in each of my meals and snacks. Now that I’ve been reaching for cold breakfasts instead of my usual eggs and toast, it’s even more important that I find products that have plenty of protein built in. For this parfait, I make sure to use creamy and thick Greek yogurt, which has a lot more protein than its standard counterpart. You can use whatever fruit you like, but I chose papaya, banana, pineapple, and kiwi to give it a tropical summer flavor. To add even MORE protein, I also like to stock up on the . I first discovered it when exploring the cereal aisle at Walmart (my fave). I grew up eating the Nature Valley granola bars, and I was so happy to see that they make loose granola! I’ve been hooked on it ever since that fateful day. I love that this granola has big clusters mixed in with smaller pieces, which makes it easy to snack on when that afternoon hunger strikes. It also stays nice and crunchy for a while, even when layered with juicy fruit and yogurt. That’s one of my top granola criteria and passes the crunch test with flying colors.

I also appreciate that they have so many delicious flavors to choose from! I love the  and I pair it with vanilla or strawberry yogurt and berries (YUM!). Ingredients
  • 2 cups Nature Valley Granola Protein Oats N’ Honey Crunchy Granola
  • 2 cups coconut Greek yogurt
  • 4 cups tropical fruit chunks (pineapple, papaya, banana, kiwi…etc)
  • ¼ cup toasted coconut
Instructions
  1. In a cup, layer 1/2 cup of granola, 1/2 cup of Greek yogurt, and 1 cup of berries. Top with a sprinkle of toasted coconut and serve cold.
