We officially had our first pool day of the summer and it was SO glorious! No pool lounging goes down at our house without a little bit of booze, and 9 times out of 10, it’s rum. My parents are obsessed with frozen drinks like daiquiris, piña coladas, and Miami vices. Ohhh the Miami vices. But, when I’m hot by the pool, I want something more refreshing and drinkable. AKA, no brain freeze. That’s where this Easy Fauxjito comes into play.
Normally, I love a classic Mojito with club soda and bit of sugar, but on this particular day, lemon-lime soda was the only thing we had in the house. Before I let the bummer set in, I realized that it would actually be a perfect substitution for the ingredients that we were lacking, and it was! I grabbed a handful of mint from the garden, some fresh lime juice, and my Blue Chair Bay White Rum, and we were all set.

- 1-ounce fresh lime juice
- 12 fresh mint leaves
- 1 cup crushed ice
- 2-ounces Blue Chair Bay White Rum
- 1-ounce lemon-lime soda
- In a highball glass, muddle together lime juice and mint leaves until fragrant. Add crushed ice. Pour over lemon-lime soda. Gently stir, then add rum and stir once more. Garnish with a stem of mint and a straw.
