Fall season is for indulgent pumpkin recipes. It’s also important to keep a balance of healthy foods as well. This Pumpkin Apple Smoothie Bowl is packed full of nutrition and all the Fall flavors you love!
If you can’t tell, I’ve been on a healthy recipe kick with the last couple of posts. Don’t worry, I’m sure I’ll be back soon with something super-indulgent. I’ve recently been loving eating whole, healthy and clean foods. I’m also not the kind of person that can have a bowl full of cookies in the kitchen and just leave them there.
I’m an all or nothing kind of person when it comes to my diet. Ooops. I find that no matter what, if I start out the day with a healthy and hearty breakfast, the rest of my day follows that pattern. This Pumpkin Apple Smoothie Bowl is going to be my new go-to for those days when I want something super flavorful to jump-start morning.
This is the first smoothie bowl I have ever created and I’m fairly certain the only one I’ve ever had. TBH, they’ve always kind of freaked me out. I mean they’re beautiful on Instagram (do you follow me? You should. Click HERE), but I always thought they were just for show. News Flash: They’re not.
They’re delicious and not weird at all. I love smoothies, but I thought it would be strange eating it with a spoon. In my opinion, you need a lot of different textures to offset the actual smoothie, but maybe that’s just me. I chose to top mine with apple, coconut flakes, hemp seeds, and chia seeds.
I meant to put on pumpkin seeds but I forgot them 🙁 oh well. I’m counting down the days until I can have this breakfast again and I highly recommend you try it!
- 1 frozen banana
- 1 cup chopped apple (you can leave the peel on)
- 2/3 cup pumpkin puree
- 2/3 cup rolled oats
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/2 tsp turmeric
- 1/2 tsp vanilla
- 1/2 cup almond milk
- To top
- 2 tbsp chia seeds
- 2 tbsp hemp seeds
- 1/4 cup coconut flakes
- 1/4 cup chopped apple
- 2 tbsp pumpkin seeds - I forgot to use mine 🙁
- Place all smoothie ingredients in a blender and blend until smooth. Don't be afraid to let it go for a couple of minutes.
- Divide the smoothie between two bowls and top with chia seeds, hemp seeds, coconut, apple, and pumpkin seeds. Serve immediately or refrigerate.
